It all began on the shores of Lake Ponchartrain in New Orleans where I grew up fishing and hunting. Fresh and  delicious aromas from the kitchen were commonplace. I always enjoyed preparing family dinners using the daily fresh catch! Great food is focal point for this New Orleanian. As I grew older  so did my  love for cooking  served with my  own style of Deep South hospitality.  I worked my way through some of the most famous kitchens in New Orleans crafting dishes for celebrities such as Dennis Miller, Billy Crystal, Samuel L. Jackson, Sandra Bullock, professional golfer David Duval, Saints Quarterback Drew Brees, blues guitarists’ Buddy Guy and Robert Cray, among others. I survived four years at the world renowned Commanders Palace where I trained under two James Beard award winning chefs. In 2003 I was invited as one of ten chef’s to help spearhead the planning, preparation, and presentation of the evenings cuisine at the United States CCMAA {Country Club Managers Association of America} annual banquet in which 150 of the worlds top golf course designers attended. In 2005 I relocated to Raleigh after Hurricane Katrina. My passion for preparing great food continued in North Carolina where I opened a small catering company and then a full service restaurant in 2008. In 2010 I was lucky enough to cook for a small group of international food critics including the acclaimed Alan Richman of GQ Magazine. In 2011 Battistella’s Classic New Orleans and Upscale Southern Cuisine opened in downtown Raleigh’s City Market and it  quickly became a customer favorite. It was voted best new restaurant downtown in 2012, receiving four stars and one of six best new restaurants in the triangle by the News and Observer in 2012. Today my relationship with some of the best farmers and local suppliers enable me to  offer my expertise and passion.
